Grilled Vegetable Recipe

 

Ingredients

 

For Dressing

 

2 tbsp vinegar, 1/4 tsp salt, 1/4 tsp pepper, 2 tbsp mustard, 2 tsp lemon & herbs (signature blends), 1/4 cup oil

 

For Veggies

 

2 bell peppers (sliced), 2-5 carrots (large & sliced), 2 zucchini (sliced).

Directions

 

First, combine all the ingredients of the dressing in a bowl and mix well. Set aside to use further.

 

Now cut all of the vegetables into pieces and make sure you cut each pepper into 4 or 5 pieces and some do in the cases of zucchini and carrots. Then pour the dressing mixture into the vegetables and toss nicely.

 

Prepare the BBQ from 400°F (200°C) to 450°F (230°C). Now grill everything over direct heat and heat for about 5-7 minutes. Then turn over the veggies and grill for another 5-6 minutes. Remove the veggies from the heat and serve with burgers, kabobs, or paratha.

Chicken Barbeque Grill Recipe

 

Ingredients

 

4 pounds chicken thighs and drumsticks (bone-in, skin on), 2 teaspoons salt, ½ teaspoon black pepper, half teaspoons garlic powder, ½ teaspoon onion powder, half teaspoon paprika, sweet or smoked, 3 tablespoons oil, 1 cup sauce (BBQ).

Instructions

 

Season the Chicken

 

First, prepare for the season by combining salt, pepper, garlic powder, onion powder, and paprika. Toss both sides of the chicken with about ¼ teaspoon of seasoning and drip with about ½ teaspoon of olive oil.

 

Preheat the Grill

 

Prepare the grill from 375 to 400ºF and prepare the cooking grates also with the oil.

 

Grill the Chicken

 

Place the skin of the chicken down on the grill and cook for 5 minutes. Then turn over, pour barbecue sauce and cook for another 5 minutes. Do the same process every 2 to 3 minutes. After that, minimize the heat from 165 to 170ºF and simmer for 25 to 30 minutes. Now move the chicken to the indirect heat side of the grill to finish. Serve with sauce.

BBQ Beef Grill Recipe

 

Ingredients

 

1kg thick steak, 2 tbsp sauce, 3 garlic cloves, crushed, juice 2 limes, 2 tbsp vinegar, 1 tbsp cumin seed, one tbsp chili flakes, 1 small onion, grated, 2 tbsp olive oil (extra for drizzling).

Directions

 

First, pieces the steak into 6 or 7 chunks. Now take a bowl and combine sauce, garlic, lime juice, vinegar, spices, onion, and olive oil pour the mixture on the meat and mix well on both sides. Cover the bowl and marinade in the refrigerator for 1 day. Remove before 1 hour of grilling.

 

Prepare the grill and drizzle the meat with a little more oil, then season. Drift 2 thin metal skewers through 2 of the steaks. Follow the same process as the others. Grill for 4-5 mins on one side. Do the same process 2-3 times. Allow the beef skewers to keep on foil for 10 mins. When warm, slice and serve with the sauces.

BBQ Grilled Whole Fish Recipe

 

Ingredients

 

2 whole fish ( as you choose), ¾ tsp salt, ¼ tsp pepper, 1 tbsp garlic minced, one lemon (sliced thinly and cut into wedges), 1 leek ( sliced into ⅛ inch rounds), one scallion (cut into 2-inch pieces), 1 shallot ( cut into thin slices), 2 rosemary sprigs, 4 stalks parsley, vegetable oil.

Directions

 

Preparing the fish:

 

First, clean and wash the fish well removing the gills and tail. Let the fish dry and then cut it into 3 slits on each side. Make sure each slit is about 1 inch deep. Then add salt and pepper on the skin, slits, and inside of the cavity of the fish. Now add garlic, lemon wedges, and green onions in each of the cavities and the slits.

 

Finally, stuff the fish with leeks, scallions, shallots, rosemary, and parsley. You need to use toothpicks to keep the stuffing inside the cavity. Add a little amount of vegetable oil all around the fish.

 

Grilling the fish:

 

Prepare the grill and place the whole and cook each side for about 6-8 minutes. However, make sure you cover the bbq. When the internal temperature is about 145°F and the meat is firm and non-transparent, then your BBQ grilled whole fish is ready. Next, wrap the fish with foil for about 6-8 minutes and then serve.

Barbeque Grilled Mutton Chop Recipe

 

Ingredients

 

For the mutton:

 

5 pounds mutton shoulder, 1 tablespoon salt, 1 tablespoon ground black pepper

 

For the basting sauce:

 

1 cup vinegar, 2/3 cup sauce, 5 tablespoons salt, 2 tablespoons fresh lemon juice, 1/2 teaspoon freshly ground black pepper

 

For the dipping sauce:

 

1/4 cup sauce, 1 1/2 teaspoons sugar, 1/4 cup vinegar, 2 teaspoons lemon juice, 1 teaspoon black pepper, 1/2 teaspoon salt, half teaspoon onion salt, 1/2 teaspoon garlic powder, 1/4 teaspoon allspice (ground).

Directions

 

Season the mutton:

 

First, season the mutton with 1 tablespoon salt and pepper.

 

Make the basting sauce:

 

Mix together the vinegar, sauce, salt, lemon juice, and pepper with 1 1/2 cups water and boil over high heat to make the basting sauce.

 

Make the dipping sauce:

 

Prepare the dipping sauce using sauce, vinegar, lemon juice, sugar, pepper, salts, garlic powder, allspice, and 2 cups water by boiling everything for about 5 minutes.

 

Grilling the mutton:

 

Prepare the grill and place the mutton and cook as long as the mutton is fall-off-the-bone tender. Make sure the internal temperature is 190 degrees F. and every half an hour baste the mutton with the basting sauce.

 

Then remove the grilled mutton from the grill and place it on a cutting board. After cooking slice the mutton thinly. Add ½ spoon of dipping sauce over the meat. Now your BBQ grilled mutton is ready. Serve hamburger buns.
